Hi there and thanks for checking out liveinagape.com! This is my first ‘food post’ so I wanted to share with you my super easy, yummy and healthy Jalapeño Salmon Recipe. So… I’m going to be completely honest–I am not the best cook. This past summer in Manhattan I had limited cable that only showed local news stations and the Food network. Naturally, I became addicted to watching Chopped, so my fascination with food and cooking is at an all time high. Through this page, I’ll be sharing any good recipes I come across and try out as well as any new tricks and skills I pick up along the way. This first recipe is my mom’s staple for a good salmon fast.
Jalapeno Jelly Salmon
- 1 filet of Salmon per person
- Jalapeno Jelly
- a pepper jelly is also fine! I like Wegman’s version, but this one is from Wholefoods.
- Cherry Tomatoes
- 1 Orange (peeled and sliced)
- 1 Grapefruit (peeled and sliced)
- Salt and pepper
Step one: Set your oven to ‘Broil’, typically 500+ degrees fahrenheit.
Step two: Heat the jelly over low heat until it is melted. Stir it often to avoid clumping.
Step three: Slice up your tomatoes, oranges and grapefruit! You’ll combine it all for a ‘salsa’ to have on the side and eat with your cooked salmon.
Step four: Salt and pepper your salmon.
Step five: Lay aluminum foil over your baking sheet. If it isn’t non-stick, make sure to spray the aluminum foil well with cooking spray. Take the jelly off of the stove and brush it onto the salmon.
Step six: Put the salmon into the oven on the lowest rack. Let it cook until the color is transulent–about six minutes.
Tip: Turn your fan on to avoid smoke if the jelly and aluminum burn. If this happens move your salmon farther away from your broiler (at least 6 inches).
Step seven: Serve your salmon with your cut up grapefruit, cherry tomatoes, and oranges. The fruit tastes perfect with the jelly’s spicy kick. You can pour some of the jelly sauce over the cooked salmon.
